For Game Capture, you should look at the following sites:

http://www.gapyear.com/placements/gyc_game_capture.html

http://www.planetedu.com/

http://www.conservationafrica.net/

I am sure there are other websites but this is a start!

.....to name but a few great causes which you can volunteer for.
These are all based in South Africa but, if you do a search for 'animal rehabilitation' or 'wildlife volunteering' in other countries, such as Namibia, Zimbabwe or any other African country, you will find loads more links!

Hi bushbaby, where you from?
try www.sanwild.org Great place run by a great lady and this website will show you the experiences of other volunteers who have been there.
It is Sanwild Sanctuary in Limpopo. Lots of good work done there.
good luck to you..a noble cause...
regards,
Elaine
